Yam Ring Treasures Recipe (佛钵飘香珍宝)

Wash & dice chicken. Marinate for at least 30 mins. Dispose shells & de-vein prawns. Wash & dice. Peel chestnuts. Wash & slice into pieces. Soak mushrooms in water till soft. Remove stem & dice mushrooms. Remove “veins” from peas by pinching one end & pulling it off. Rinse & set aside. Heat wok & deep-fry yam ring till golden brown. Drain & put on serving plate. Deep-fry vermicelli till it expands. Drain & set aside. Heat wok & sautéed garlic & ginger till fragrant. Stir-fry chicken till half-cooked. Throw in the rest of the ingredients & seasonings. Mix well. Transfer into the yam ring when prawns turn pink.
